Naturally Grill-Friendly

There are a few vegetables that are naturally ready to grill. The best part is, none of them are expensive. Here are a few delicious additions to your BBQ this weekend:

Corn in Husk

  1. Peel off first couple of layers of husk, leaving 2 or 3 protective layers.
  2. Soak corn completely submerged in cold water for 15 minutes for extra moisture.
  3. Pull husks back BUT DO NOT REMOVE ANY HUSK, ONLY THROW OUT SILK and brush a little olive oil. You can add seasoning with olive oil if you want to get creative.
  4. Re-fold husk and apply to medium heat on grill. Turn corn as needed until the husk is evenly charred. Then, place corn in indirect heat (like the top rack)
  5. Once you can see an outline of the corn through the husk and the husk starts to pull away from corn, you can test one to see if they’re ready. 
  6. Serve with husks, or wait to cool and pull husks and silk away for your guests.

Portobello Burger

  1. Soak mushrooms bottom up (without stems) in a mixture of olive oil, vinegar, garlic, and onions for about 1 hour.
  2. Grill for about 10 minutes and serve as a burger.

Grilled Baked Potato or Sweet Potato

  1. Wash and poke a few holes in potatoes with a fork, then wrap in tin foil.
  2. Grill potatoes on indirect heat for about 90 minutes. Turn potatoes at half-way point.

Substitutes for Meat Substitutes
A lot of people have the impression that eating vegan means that you have to spend an arm and a leg on Tofurky and Trader Joe’s special vegan whatever. This isn’t true, there are plenty of cheap and easy ways to make meat substitutes with cheap, whole food ingredients.
Seitan, Tempeh, and Tofu - These are 3 meat substitutes that are very popular in vegan cooking. Seitan is the best for meat lovers gone veg. Tofu is good for making weird textures like scrambled eggs or ricotta cheese.
Nuts and Seeds - Healthy and very common in raw food recipes, also really good for staying full while eating vegan.
Beans and Legumes - Filling and full of fiber, beans and legumes are a great source of protein and are delicious. 
Portobello Mushroom (photo above) - Which produces helps your body produce its own antioxidants and helps with blood flow. Marinated mushrooms can be a great way to add some meaty flavor and a savory texture to your shroom.
Combos - Adding the foods mentioned above with grains like barley, bulgur what, or quinoa are a great way to make food like veggie burgers or “meat”loaf
