Cooking with Frozen Veggies doesn’t have to end bitter.

Easy Spicy Peanut Noodles with Broccoli Earlier I tweeted (@cheapveg) about my dinner and how easy it was. After posting I felt like I had better follow up by proving it’s simplicity.
Ingredients for 1-2 servings
Spaghetti Noodles
1 tbsp Natural Peanut Butter
coconut milk or plain soy milk 
a few slices of onion
a clove of garlic
a handful of peanuts
broccoli
peas
crushed red pepper
First dice your onion and finely chop your garlic. Next put them in a frying pan on low/med heat with a little oil until clear. Next add your broccoli, peas, and peanuts. You can start adding red pepper at this point, I usually add red pepper to taste as I cook. That way you don’t over spice at the end.
Next throw in your peanut butter and a splash of coconut/soy milk. Peanut butter consistency should be thin/creamy. Just a little thicker than the consistency of the coconut/soy milk. If your sauce is too thick, just add a in a little water to thin it out. Don’t use too much coconut/soy milk. Pour the spaghetti noodles in to the  pan and mix with sauce until the noodles are evenly coated. Add salt to taste. 
Very easy and only takes about 15 minutes.

Tip For Cooking Frozen Vegetables

Frozen vegetables, especially veggies like Broccoli, can taste a little bitter or just sorta…”off” Add a squeeze of lemon juice when you cook to neutralize the flavor.
