Baking without breaking eggs or your budget
Going vegan doesn’t mean you have to give up your favorite desserts. Chocolate cake, snickerdoodles, pumpkin pie, even pancakes, can be made vegan. Often times you only need to alter 1 or 2 ingredients to make your favorite recipes. One of which is almost always egg. And choosing the right egg replacer is vital.
- EnerG Egg Replacer - This egg replacer is great! Using egg replacer helps give you a fluffy end product and a box will last you a very long time.
- Baking Powder - If you only need to replace 1 egg, you can use half a tsp of baking powder. Some people also recommend adding a splash of vinegar. I’ve found both ways work well.
- Pureed (ripe) Banana or Applesauce - Some people really like this, I’m not sure why. Maybe the illusion of putting applesauce in to a sugary calorie packed chocolate cake makes them feel less guilty. I’m not usually a huge fan, but there are some situations where it adds complexity to your treat. In the case of fruit cakes, carrot cakes, or other desserts with fruit/veg as the center, adding the apple/banana binder can be really nice.
- 1 tbsp oil, 2 tbsp water, and 1 tbsp baking powder. This is mom’s favorite and her stuff comes out really good.
